Scientists at Tufts have found a way to turn cheap glucose into a rare sugar called tagatose. While normal sugar causes health issues like diabetes, tagatose is hard to make. These researchers used "micro-factories" (engineered bacteria) to produce it easily and cheaply. The result is a sweetener that tastes and bakes just like real sugar but has 60% fewer calories, doesn't spike blood sugar, and is actually good for your teeth and gut.
